The Castle  « Château de Les Eaux » in Normandy offers a unique recipe for a fish loaf, this mouth watering entree can be made with Julienne or Cod fish .

Ingredients  [ serves 6 ]

  • 1kg of fish (julienne or cod)
  • 4 eggs
  • 250g of cooked tomato sauce
  • 125 g of milk , add more if desired

Method : Place the fish in a pan cover with cold water. Season with salt and pepper.

Bring to simmering point and gently simmer for 20 to 25 minutes. Strain  fish and when cool remove any skin.

Using flesh only, break up and add to lightly beaten eggs, tomato sauce and milk. Once again season with salt and pepper.

Place mixture in a buttered loaf pan and cook in a bain marie for 45 minutes.

Serve cold with mayonnaise (preferably home-made) and salad.
